- 2 medium sweet potatoes
- ¾ lb of lean ground turkey
- 2 tablespoon of minced flat leaf parsley
- ¼ cup of grated pepper Jack cheese
- 1 ¼ cup of canned crushed tomatoes
- ½ teaspoon of paprika powder
- ½ teaspoon of dried oregano
- 1 teaspoon of chili powder
- 4 cloves of garlic, mince them
- ¼ teaspoon of ground pepper
- ⅛ teaspoon of ground pepper
- ¼ teaspoon of salt
- ⅛ teaspoon of salt
- 1 1.4 teaspoon of ground cumin, divide
- 1 teaspoon of extra virgin olive oil
1Wash the sweet potatoes and dry them with paper towel. When the sweet potatoes are dry, pierce all over them using fork. Make sure all surfaces are pierced well. Transfer them into the microwave and cook over high heat for 4 to 5 minutes. Take it out and pierce using fork again if the top side is soft enough. When the top side is soft enough, flip it and transfer to the microwave again. Cook the other side for another 4 or 5 minutes. Check its softness again and set aside to cool.
2When the potatoes are cool enough to handle, cut it in half in lengthwise. Prepare a medium mixing bowl, and prepare a baking sheet and layer it with cooking spray. Using an ice cream scoop or spoon, scoop the potatoes flesh carefully. Transfer the flesh into the bowl. Transfer the skin to the baking sheet and set aside.
3Using the back of the fork, mesh the sweet potatoes flesh. Make sure that most of its lumps are gone. Toss in ¼ teaspoon of pepper, ¼ teaspoon of salt, ½ teaspoon of cumin, and extra virgin olive oil. Mix them well until all season is incorporated. When it is well mixed, transfer the mixture back into the sweet potatoes skin. Divide the mixture evenly between the skins. When you are done with all the potatoes flesh mixture, set it aside.
3Take a large skillet and coat it with cooking spray. Heat the skillet over medium high heat. When the skillet is hot enough, add the ground turkey. Break up the meat using a wooden spoon and continue cooking until it is cooked through. When the ground turkey is well cooked, add ⅛ teaspoon of salt, ⅛ teaspoon of ground pepper, paprika powder, dried oregano, ¾ teaspoon of cumin, chili powder, and garlic. Stir them all together to mix. When it is well mixed, cook for another minute and add the crushed tomatoes. Mix them well, give it more stir and cook for a while. Remove from heat and set aside.
Pre heat the broiler. Meanwhile, use a spoon and scoop the ground turkey into each of the sweet potato skin. Top each of the skin with pepper Jack cheese. When they are ready, transfer the skins to the broiler and cook for 30 seconds or until the cheese is melting. Take it out and garnish it with parsley. Serve while it is hot.
